Abstract:
More than a third of
the food we produce is wasted. What value can one create if we could
give stakeholders in the supply chain more time while maintaining
quality and freshness? How can we more perfectly match supply with
demand in order to reduce waste?
This presentation will walk through
the early history of Apeel Sciences, the evolution of the technology
(from edible coatings to data-driven platforms) and business model, our
strive to stand as a symbol of sustainability, and a vision for the
future of fresh produce.

Bio:
Jenny earned her Bachelor's Degree in Engineering Chemistry and her PhD
in Chemistry from Queen's University (Kingston, ON, Canada). Following
completion of her doctoral degree, she conducted postdoctoral research
at the University of California Santa Barbara prior to joining
Apeel Sciences as Employee #2 and the Director of Extraction
Engineering. She has since served as the Senior Vice President of
Operations at Apeel Sciences, leading the organization through rapid
growth from their early days working in the garage to establishing Apeel
operations at more than 40 sites and 8 countries worldwide, and now
leads Apeel's efforts in Government & External Affairs and Emerging
Markets. She has also recently been recognized on Inc.'s 2021 Female
Founders 100 List and as Produce Business' Top 40 Under 40 Class of
2021. More than anything, Jenny loves what she does and hopes to share
that excitement and enthusiasm with others.
